Pumpkin Roll

Pumpkin Roll

3 eggs
1 cup sugar
2/3 cup pumpkin
¾ cup flour
2 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
1 tsp baking powder
1 tsp lemon juice
¾ cup walnuts

Mix all ingredients well and pour into 15x10 x1 pan lined with greased wax paper or foil.  While hot, roll cake and towel.  Cool on wire rack.  Unroll cake; remove towel.  Spread with filling and roll again.

Filling:
1 cup powdered sugar
6 oz. cream cheese
4 TB butter
½ tsp vanilla

Mix well, spread evenly on cake, roll like a jelly roll.   Cook on higher rack or for 13 mins.
