White Chocolate Raspberry Bundt Cake

INGREDIENTS

White Chocolate Raspberry Cake

1 (15.25-ounce) box white cake mix

1 (3.4-ounce) package instant white chocolate pudding mix

1 cup sour cream

4 large eggs

¼ cup water

½ cup oil

1 cup white chocolate chips, chopped into smaller pieces

1/2 cup red raspberry preserves, divided

Cream Cheese Frosting

16 ounces cream cheese softened

½ cup butter softened

3-4 cup powdered sugar

2 teaspoons vanilla

DIRECTIONS

White Chocolate Rasberry Cake

Heat oven to 350 degrees F. Grease a standard Bundt pan with cooking spray (use shortening and dust well with flour - tends to stick). Set aside.

Mix together cake mix, pudding mix, sour cream, eggs, water, and oil. Fold in white chocolate chips.

Fill the prepared pan with half of the batter.

Spoon ¼ cup raspberry preserves in 5 or 6 small spoonfuls over the batter.

Using a knife, swirl the filling through the cake thoroughly, do not leave large clumps of preserves in the batter. Pour the remaining batter in evenly. Spoon the remaining ¼ cup of raspberry preserves onto the batter, repeating the swirling process.

Bake for 45-50 minutes (cook at least 55 min). Remove from oven. Let cool for 10 minutes.

Remove the cake from the Bundt pan by placing a plate upside down over the Bundt pan. While holding the plate firmly on top, flip both over so the cake comes out onto the plate. Cover the cake with plastic wrap and place it in the fridge overnight before frosting.

Cream Cheese Frosting

In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the powdered sugar. Start with 2 cups, then keep adding more until it is nice and thick.

Spoon the frosting into a resealable zip-top gallon bag. Clip one bottom corner of the bag.

Squeeze frosting out of the bag onto the cake in strips, as pictured.

Ombre Brownie Cake

Ombre Brownie Cake 






from Ghiradeli Cake mixes

 

For 9” cook about 38 min or less

Grease amd flour bottom of cake pan and up sides about .5- inches. Line bottom of pan with parchment paper

Be generous with chips and chill before whipping if needed. This was a hit! EASY

INGREDIENTS

  • 2 packages Ghirardelli Dark Chocolate Brownie Mix 
  • 1/2 cup Water 
  • 1 cup Vegetable oil 
  • 2 Eggs 
  • 1 cup Ghirardelli Bittersweet 60% Cacao Baking Chips 
  • 1 cup Ghirardelli Milk Chocolate Chips 
  • 1 cup Ghirardelli Classic White Baking Chips 
  • 2 1/4 cups Heavy whipping cream, divided into three 3/4 cup portions 
  • 3/4 cup Light corn syrup 

DIRECTIONS

  • Heat oven to 325°F. 
  • Lightly grease and line 3 (8-inch) round cake pans with parchment paper. 
  • Prepare double batch of brownie batter as directed. Divide batter evenly into 3 pans. 
  • Bake 38-40 minutes. 
  • Cool completely before removing from pans. 
  • For Ganache: Place each type of chips into 3 bowls. 
  • Heat cream in microwave at 30 seconds intervals until it just boils. 
  • Immediately pour 3/4 cup cream over each type of chips: stir until chocolate melts. 
  • Add 1/4 cup corn syrup to each, stir until shiny. 
  • Let cool 2 hours before whipping with an electric mixer until fluffy. 
  • Place cooled brownie layer on plate and spread different variety of ganache between each layer. Serve chilled.

Chocolate Frosting

Frost 2 8-or 9-inch layers
¼ cup Crisco, butter, or margarine, melted
1/3 cup cocoa
¼ tsp salt
3 TB milk (or 3 oz cream cheese and a little milk)
4 cups powdered sugar

combine butter, cocoa, salt and milk or cream cheese.  Add sugar 1 cup at a time


Lazy Dazy Oatmeal Cake

Lazy Dazy Oatmeal Cake

1 ¼ boiling water over 1 cup quick oats
½ cup butter
1 cup sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
1 ½ cup flour
1 tsp soda
½ tsp salt
¾ tsp cinnamon
¼ tsp nutmeg

Cream butter, sugar and brown sugar.  Then add vanilla and eggs.  Sift in the dry ingredients.  Add oats and water.  Turn into 9x11 pan.

Frosting:
¼ cup butter
½ brown sugar
3T cream
½ cup nuts
¾ cocoanut

melt butter and sugar.  Add cream and remove from heat.  Bake at 350 for 50-55 minutes.  Frost while hot. Broil until it bubbles.


Self-filled Cupcakes

Self-filled cupcakes

1 pkg chocolate cake mix
1 8 oz pkg cream cheese (softened)
1/3 cup sugar
1 egg
dash of salt
1 6 oz pkg (1 cup) semi-sweet chocolate chips

Fill paper cups 2/3 full with cake batter.  Cream the cheese with sugar, beat egg and salt in.  Stir in chips.  Drop a rounded tsp. full cheese mixture into each cup.  Frost.  Makes 30

½ cup shortening
2 eggs
3/2 or 1 cup milk???
½ cup nuts
½ tsp salt
½ tsp ginger
2 ¼ cups flour
1 ½ cup sugar
1 cup pumpkin
½ tsp soda
3 tsp baking powder
½ tsp cinnamon
1 tsp nutmeg

Mix like cake; add pumpkin just before dry ingredients.  Bake at 350 for 45 min.  11x14 pan.  Frost w/cream cheese
