Plain Cheesecake

Plain Cheesecake (Helen Bares)

4 8-oz. pkg.  (2lbs) cream cheese, softened
1 ¼ cup sugar
4 eggs
2 tsp vanilla
Juice from ½ lemon
1/4 cup flour
¼ cup heavy cream
1 cup sour cream

Beat cream cheese until smooth.  Add sugar and beat until fluffy.  Beat in eggs, vanilla and lemon juice.  Sprinkle flour over cream cheese and just blend.  Add sour cream and heavy cream.  Blend well.
                  Wrap bottom and sides of 9-inch springform pan in foil.  Grease bottom of pan with shortening.  Line bottom with parchment paper.  Pour in batter.
                  Bake in 350 oven about 1 hour.  Turn off oven and leave until cooled to room temperature.  Then cool on counter until set; refrigerate for at least 5 hours.

                  Variation: Melt 8 oz. semi-sweet or milk chocolate.  Add one cup of cheesecake batter to the chocolate.  Mix well; swirl through batter in springform pan.
