Frozen chocolate mint squares (Pat Brown)
1 1/2 cups finely crushed chocolate wafers
(30 wafers)
6 TB Margarine, melted
1 7-oz jar Kraft Marshmallow Creme
1/2 tsp mint extract
Few drops green food coloring
3/4 cup miniature semisweet chocolate pieces
2 cups whipping cream
In Bowl combine crushed wafers and
margarine. Press mixture firmly onto
bottom of rectangular pan.
in
medium mixing bowl beat the marshmallow creme, mint extract, and green food
coloring with an electric mixer on medium speed till smooth. Fold in 1/2 cup of the semisweet chocolate
pieces.
In
small mixing bowl, whip cream till soft peaks form; fold into marshmallow creme
mixture. Spread over crust in
rectangular pan. Sprinkle remaining
semisweet chocolate pieces over dessert.
Cover and freeze at least 6 hours.
At
serving time, remove from freezer and let stand for 10 to 15 minutes. For easy serving, place warm moist cloth on
the bottom of rectangular pan. Cut the
squares with a table knife by applying light pressure. Makes 8 servings.
