Cream Pie

Basic Cream Pie (Roma Jeane Stock)


1/3 c. flour

2/3 c. sugar

¼ tsp salt

2 c. milk, scalded

3 slightly beaten eggs yolks

2 TB butter

½ tsp vanilla

1 9-inch baked pastry shell


Mix  flour, 2/3 c. sugar, and slat; gradually add milk.  Cook stirring constantly until thick. Slowly add small amount of hot mixture to egg yolks; stir into remaining hot mixture. Cook 2 min. cool; add butter and vanilla. Pour into cooled baked shell.

Variations:

Chocolate: increase sugar to 1 c. melt 1.5 oz squares unsweetened chocolate in scaleded milk

Banana: add 2 or 3 sliced bananas when cool

Coconut: Add 1 c. moist shredded coconut

Butterscotch: substitute 1 c. brown sugar for 2/3 c. white sugar and increase butter to 3 TB.

Our best Brownies (Margetts)

2 eggs beaten
1 tsp vanilla
2 ½ cups brownie mix
½ cup chopped nuts
Frosting
2 TB milk


Preheat oven to 350.  Grease and flour an 8-inch square pan.  In a medium bowl, combine eggs, vanilla and Brownie mix.  Beat until smooth.  Stir in nuts.  Pour into prepared pan.  Bake 30 to35 minutes, until edges separate from pan.  Cool.  Cut into 2-inch bars.  Sprinkle or frost with frosting of your choice.  Make 16 brownies.

Corn Flake Cookies (Shauna Hansen)

4 cups cereal
1 cup walnuts

Bring to a boil and cook 3 minutes:
½ lb margarine,
½ cup sugar
2 cup marshmallows
½ cup brown sugar

Remove and add 1 tsp vanilla.  Pour over and drop on waxed paper.  Cook and shape into balls.


Maureen's Chocolate Chip Cookies

Preheat oven to 375
Sift:
2 ¼ cup flour
1 tsp BP
1 tsp Salt
set aside

Combine: 1 cup butter
¾ cup sugar
¾ cup brown sugar
1 tsp. vanilla
½ tsp. water
Beat until creamy

Add two well-beaten eggs.
Sift in flour mixture and beat
Add 1 12oz. pkg. chocolate chips.  (stir in)

Spoon ½ tsp. well rounded spoonfuls onto greased cookie sheet.  Cook 10 to 12 mintues.  (8 minutes at 350 in our oven).

Mix and bring to bubble but not boil:
½ cup honey
½ cup sugar
Add:
¾ cup peanut butter
1 tsp vanilla

4 cups rice Krispies

Bring to bubble:
½ cup honey
½ cup sugar

Add:
1 cup (3/2 cup) peanut butter
1 tsp vanilla
4 cups rice krispies

Mix and press into buttered 9x13 pan and cool.  Melt  1-6oz. pkg. butterscotch chips and 4-hershey bars and spread over (15cent size).
