Fanny Farmer Pancakes

Fanny Farmer Pancakes

Mix in bowl:
½ cup milk
2 TB melted butter
1 egg
Beat milk, butter, and egg together lightly

Sift:
1 cup flour
2 tsp. Baking powder,
2 TB sugar
½ tsp. salt


Add to milk mixture all at once.  Stir just enough to dampen the flour.  Add more milk if necessary to make the batter as thick as heavy cream.  Makes 6 or 8

Pastry for a 9 inch pie shell
4 eggs, beaten
½ bl. Fresh mushrooms, sliced
¼ cup sliced green onions
1 TB butter
1 cup (4 oz. ) shredded swiss cheese
1 cup light cream or milk
¼ cup grated Parmesan cheese
½ tsp. salt


Roll out pastry and fit into a quiche pan or a 9 in pie pan.  Prick bottom of pastry with a fork and bake at 400 for about 15 minutes.  Set pie shell aside.  Reduce oven temperature to 375.  In a large skillet over medium heat sauté onions and mushrooms.  Put in bottom of shell.  Mix in rest of ingredients and pour over.  Bake 35-40 minutes at 375. 

Swenson's Swedish Hotcakes

3 eggs
1 c milk
8 TB flour (more may be needed)
1/3 tsp. salt
3 TB melted fat

Beat 1st four ingredients with beaters then add fat.  Fry in hot, lightly greased pan until brown on both sides.


Double recipe I use 1 ½ c. milk instead of 2

Quiche

(use fresh sautéed mushrooms)

prepare 1 pie crust recipe flute edges
combine 1 ½ c. cheese (grated mild cheddar)

¼ ? tsp flour.  Pour into pie shell. Sprinkle 1 c. diced ham onto cheese.  Combine 3 eggs in separate bowl, I c. milk or light cream, ¼ tsp salt, ¼ tsp dry mustard.  Beat (heat) until smooth.  Bake at 400 for about 1 hour.  Garnish with parsley.

Ingredients:
24 Rhodes frozen rolls
½ pkg 3 ox. Butterscotch pudding (not instant)
½ cup melted butter
½ cup brown sugar
½ cup chopped nuts
1 tsp cinnamon
¼ cup honey (to 1 Tb?)

Directions:

Grease bundt pan.  Arrange rolls evenly.  Sprinkle on dry pudding. Combine melted butter, brown sugar, pour over rolls.  Sprinkle on nuts then cinnamon.  Cover with cloth and raise overnight, or allday.  Bake 325 for 25-30 minutes.  Turn over on plate immediately to cool. 

Butter Syrup

Melt 1 c. sugar with ½ c. butter
            Bring to boiling
Add ½ c. canned milk, heating slowly
