Mini Cheesecakes

Mini-Cheesecakes
Cupcake papers
24 vanilla wafers
2—8oz pkg cream cheese
¾ cup sugar
2 eggs
1 tsp vanilla
1 TB lemon juice

Beat sugar and cheese together first.  Then add rest of ingredients and combine until light and fluffy.

Put papers in muffin tins.  Put 1 cookie in each paper.  Spoon in filling evenly (approximately 2/3 full).  Bake at 375 for 15-20 minutes.  Refrigerate overnight.


Alternate: Bake 365 for 25 minutes; leave in oven.
