Cheesecake (R Meyers)

Cheesecake (R Meyers)

2 lbs cream cheese
5 eggs
3 TB butter
4 TB cornstarch
1 TB vanilla
2 TB lemon juice and grated cheese?
2 cups sour cream

Soften cheese 45 minutes.  Beat until fluffy and add remaining ingredients.  Beat on high speed for 10 minutes.  Bake in well buttered spring form pan at 325 for 1 hour.  Turn oven heat off and leave cake in oven 1 hour.  Don't open oven at all during the 2 hours. Set on rack and cool.  Gently release spring and remove sides of pan.  loosen cake from pan bottom and slide on serving plate.  Refrigerate overnight.  Serve with strawberries, cherries or other. 

1 pkg strawberries
1 TB know gelatin
1/3 cup cold water
1/4 TB red food color
3 TB sugar
2 cups fresh strawberries


Heat frozen strawberries, add gelatin soaked in cold water, also sugar and color.  Chill until thick, but not set.  Pore over top of cake and garnish with fresh strawberries.  Refrigerate 2 hours.
