Chocolate Amaretto Cheesecake

Chocolate Amaretto Cheesecake from Anne Parish

3 lbs. cream cheese
1 cup sugar
9 oz. semi-sweet chocolate, melted
1 1/2 cup egg whites
1/2 cup amaretto
3/4 cup heavy cream

                  Beat softened cream cheese and sugar together until smooth.  Add cream and amaretto.  Beat egg whites separately until fluffy, add to cream cheese.  Pour melted chocolate in slowly and beat until well mixed. 
                  Pour into two 9-inch springform pans and bake at 350 degrees for 35 minutes, then at 400 degrees for 5 minutes.
                 
Topping:
Melt 2 oz. semi-sweet chocolate, then add 4 TB sugar, 2 cups sour cream and 2 tsp. amaretto.  Mix well and spread on top of cakes.
