Turtle Cookies (Eileen)
Makes 48
Cream:
¾ cup butter
¾ cup sifted powdered sugar
Add:
1 tsp vanilla
2 TB evaporated milk
1 tsp salt
Blend in 2 cups flour (don’t handle a
lot). Chill well until workable.
Make 3 ½ x 1 1/2" rectangles or use round cookie cutters. Bake on ungreased cookie sheet at 325 for
12-15 minutes (until light brown).
Melt slowly in double boiler:
28 light caramels
½ cup evaporated milk
Add: ¼ cup butter
1 cup well sifted powdered sugar
1 cup chopped pecans
Put 1 tsp on each cookie
Melt:
1 cup (6 oz) chocolate chips
1/3 cup evaporated milk
Add: Stir in 2 TB butter, 1 tsp vanilla, ½
cup sifted powdered sugar, whip.
Pour over caramel and top with a pecan
