Lemon Bundt Cake

Lemon Bundt Cake

1 pkg lemon cake mix
1 pkg lemon instant pudding mix (4 serving size)
5 eggs
½ cup vegetable oil
1 cup water

Heat oven to 350 degrees.  Grease and flour heavy bundt pan.  Place cake mix, instant pudding, eggs, oil and water in large bowl and beat at medium speed 2 or 3 minutes.  Bake about 45 minutes, or until center springs back when touched lightly.  Cool about 20 minutes, then remove from pan. 

Icing:
Blend together 1 1/3 cups powdered sugar, 5 TB lemon juice, 1/3 cup cocoanut.  Spoon frosting over top and sides of warm cake, covering as much of the cake as possible

High Altitude:
Stir 1/3 cup flour into mix.  Mix as directed except use 1/3 cup oil and 1 ¼ cup water.  Bake at 375 for ~40-45 minutes
