Grasshopper Pie

Grasshopper Pie

Crust: 1 ¾ cup chocolate wafer crumbs
2 TB sugar
¼ cup butter or margarine, melted

Heat oven to 350.  Mix crumbs, sugar and butter.  Press mixture firmly and evenly against bottom and side of 9—inch pie pan.  Back 8 minutes cool.

Pie: 
1 1—pint jar marshmallow crème
¼ cup milk
4 drops peppermint extract (or to taste)
6 or 7 drops green food coloring
1 c. whipping cream, whipped
small bits of chocolate chips


In mixing bowl combine marshmallow crème, milk, peppermint extract, and food coloring; whip till fluffy.  Fold in whipped cream.  Spoon filling into cookie crust.  Freeze till firm, 8 hours or overnight.  Garnish with dollops of additional whipped cream and bits of chocolate chips.
