Basic Cream Pie

Basic Cream Pie

1/3 cup flour
2/3 cup sugar
¼ tsp. salt
2 cups milk, scalded
3 slightly beaten egg yolk
2 TB butter
½ tsp. vanilla
1 9-inch baked pastry shell
3 stiff-beaten egg whites
6 TB sugar

Mix flour, 2/3 cup sugar, and salt;  gradually add milk.  Cookin double boiler until thick, stirring constantly; slowly add small amount of hot mixture to egg yolks; stir into remaining hot mixture.  Cook 2 minutes.  Cool; add butter and vanilla.  Four into cooled baked shell.


Chocolate: increase sugar to 1 cup.  Melt 1 ½ ounce squares unsweetened chocolate in scalded milk.
