Chicken Kiev

Chicken Kiev
(Eileen)

3 large chicken breasts (or more)
6 mushrooms chopped fine (or more)
½ lb. unsalted sweet butter
1 clove garlic
2 TB chopped parsley
salt and pepper to taste
2 eggs
1 TB water or milk
fine bread crumbs


Debone breasts and place between waxed paper and flatten with mallett.  Saute mushrooms .  Cream butter garlic, parsley, and mushrooms.  Chill and shape into rolls like your thumb.  Season chicken with salt and pepper.  Place butter on breasts and fold.  Secure with toothpick.  Beat eggs with water and roll in crumbs, egg, and crumbs again.  Fry in butter.  Drain.  Place in hot oven for 15 min till tender.
