Cornish Game Hens

Cornish Game Hens
(4 hens)

stuffing: page 87 of the 45th ward cookbook

For 4 hens:
½ tsp salt
¼ tsp accent
¼ tsp pepper
1/8 paprika

Cook breast up in preheated 350 oven

Baste every 20 minutes with a pastry brush: 

¼ c. hot water
1 tsp cider vinegar
1 tsp honey
1 tsp soy sauce

Cook 1 1/2 -2 hours

Apricot Sauce:
2 tsp cornstarch
½ c. sugar
1 small can apricots, drained (16 oz)


Cook giblet and neck.  Add 1 ½ c. broth to apricot stuff.  Bring to a boil
