Chicken Tikka Masala
Ingredients:
3 lbs boneless, skinless chicken (about 5 chicken breasts)
1 large onion, diced
4 cloves of garlic, minced
2 tsp. fresh ginger, minced
1 (29 oz) can tomato puree
1 1/2 cups plain yogurt
2 tbsp. olive oil
2 tbsp. garam masala
1 tbsp. cumin
1 tsp. paprika
2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. ground black pepper
1/3 cup honey
2 bay leaves
1 cup heavy cream
3 tbsp. cornstarch
chopped parsley or cilantro, for topping
Directions:
1. Place chicken in crock pot.
2. Mix all ingredients up to the bay leaves in a large bowl. Combine and add to the crock pot, making sure that the chicken is coated well.
3. Cover and cook for 4 hours on high, or 8 hours on low.
4. When done, whisk together heavy cream and corn starch in a medium bowl and gently stir into crock pot. Let cook for an additional 20 minutes to thicken up.
5. Serve over white or brown rice.
