Stuffed Mushrooms
1 lb. mushrooms (about 30), washed
1 lb. sausage (hot or sage)
10-12 medium sized shallots
4 cloves garlic, minced
sage to taste*
oregano to tase
thyme to taste
8 oz. cream cheese
*fresh herbs are preferred
Note: can add 2 ½ oz. chopped black walnuts
Remove stems from mushroom caps and chop. Brown sausage with
shallots, garlic and herbs.
Blend cream cheese with chopped mushroom stems. Add cooled sausage and blend thoroughly.
Fill mushroom caps amply with filling. Place in over broiler until slightly browned
or done to your taste.
