Quick and Easy Nacho Platter
1 lb. extra lean ground beef
1 pkg. taco seasoning (2 tsp chili powder, ½ tsp cumin, 1
tsp salt)
1 small can chopped green chillies
1 to 2 lbs cheddar (grated)
salsa sauce
1-2 cans chopped black olives
sour cream
1-2 avocados, smashed (or 1 pdg. Calavo frozen guacamole)
1 large can refried beans
corn chips for dip
spread large platter with refried beans. Cook ground beef
with taco seasoning and drain. Spread
over beans. Grate cheese in food
prcessor and sprinkle lightly over beans and meat. Dot with salsa. Heat platter. Pile guacamole in center of
heated platter. Make a circle of olives around the guacamole. Make a circle of green chilies around olives.
Make a circle of sour cream around chilies.
Make a circle of grated cheese around outer edge of platter. Serve with
corn chips for dip or cut frozen tortillas in pie shaped wedges, bake in 325
oven ten minutes and sprinkle with salt, and use for dip. This is a great first course for a dinner
party for the living room while guests assemble or for a barbeque while you are
cooking and people want to be snacking.
Use leftovers to fill taco shells or burritos.
