Carrot Bread

Carrot Bread

Mix and set aside:
4 c. flour
1 c. wheat flour
4 t. baking powder
2 t. soda
2 t. cinnamon
1 t. salt

Mix w/ wire whisk:
1 c. apple sauce
6 eggs
¼ c. oil
2 c. pack brown sugar

Stir into wet ingredients:
4 c. grated carrots
small can crushed pineapple (lightly drained)

Stir dry ingredients in until moistened.  Bake 250 40-50 minutes.  Makes 2-4 loaves depending on the size.  Fill pan about ¾ full. 


Spread with pineapple cream cheese
