Fry Bread

(This recipe is taken from the “The Navajo Homemaker Cook
Book”, published by the office of Navajo economic opportunity.)
Put four cups flour in a bowl.
Add 1 TB baking powder and 1 tsp salt.
Add 2 RB powdered milk
Mix altogether
Add one and ½ cups warm water and mix.
Mix it with your hand until soft.
Then, take a ball of soft dough. Pat back and forth and pull until flat and
round.
Melt 1 c. lard in pan. (usually use about 8 inch heavy black
skillet and fry just one at a time).
Put bread in hot fat; turn until brown on both sides.
Note of interest: in the Northern Cheyenne tribe of eastern
Montana, the women plke a hole in the bread just before frying it, so the evil
spirits can escape.
