Pastry for a 9 inch pie shell
4 eggs, beaten
½ bl. Fresh mushrooms, sliced
¼ cup sliced green onions
1 TB butter
1 cup (4 oz. ) shredded swiss cheese
1 cup light cream or milk
¼ cup grated Parmesan cheese
½ tsp. salt
Roll out pastry and fit into a quiche pan or a 9 in pie
pan. Prick bottom of pastry with a fork
and bake at 400 for about 15 minutes.
Set pie shell aside. Reduce oven
temperature to 375. In a large skillet
over medium heat sauté onions and mushrooms.
Put in bottom of shell. Mix in
rest of ingredients and pour over. Bake
35-40 minutes at 375.
