Gourmet Guacamole
5 avocados, peeled and pitted
1/3 c diced yellow onions
1/3 cup diced tomatoes
¼ teaspoon fresh ginger
½ tablespoon crushed red pepper
¼ tsp Mexican oregano
¼ c. chopped cilantro
juice and the zest of a fresh, juicy lime
salt and pepper to taste
Mash all ingredients together until the avocado reaches the
desired smoothness.
Serves 8 to 10 people.
