Orange Banana Bars

Orange Banana Bars

1 large ripe banana, peeled
1 cup flour (substitute up to ¼ cup oat bran)
1 tsp baking soda
¼ tsp salt
1/3 cup butter or margarine
2/3 cup sugar
1 egg
½ cup toasted chopped walnuts
2 tsp grated orange peel
yield:16 bars

Puree banana in blender.  Combine dry ingredients.  Beat butter with sugar; then beat in egg.  Beat in dry ingredients alternately with banana.  Fold in nuts and orange peel.  Pour into a greased 8-inch-square baking pan.  Bake at 350 for 30 minutes.  Cool in pan.  Cut into bars.


If desired, frost bars as needed.  Keep a covered container of cream-cheese frosting on hand in the refrigerator.  Thin 3 ounces cream cheese with juice from 1 orange (or 2 TB concentrate).  Beat in about 1 ½ cups confectioners’ sugar.
